If you’ve ever had Cilantro Lime Chicken and loved it just like we did, well this is probably your last stop for a recipe that’s a keeper. And because my husband loves Cilantro chicken, I had to make it a zillion times and in those times i’ve tweak it and finally came to the best tasting cilantro chicken and cilantro lime rice we’ve ever had. This recipe involves a little soya sauce to give it that 5th element of taste perception which is Umami. I know what you’re thinking, you’d probably think it’s not authentic but trust me, it makes it so much more flavorful. This is the ultimate Cilantro Lime Chicken.
When my husband first had cilantro chicken from a big box supermarket (uncooked in a packet), he fell in love with it but not so for me because the package was full of weird ingredients and preservatives. So i ventured into experimenting one that we both like and it’s healthier compared to the one he likes. I started off with the basic ingredients cilantro, lime and garlic. I added a dash of cumin and jalapeno. I have also added soya sauce for a rounded and umami flavor and a few leaves of spinach to retain the green color. My Executive Chef once told me the secret to retain the green color in pesto is to add in some spinach to the blending process. So i did that here. This secret was from an Italian Chef he learned from when he was much younger. The spinach will not alter the flavor of the cilantro but will retain that green hue. I did not use it in the picture above because i forgot to put it in. That’s the side effect of getting old. 🙂 This Cilantro Lime Chicken turned out super delish. When the chicken was done, i used several tablespoons of the au jus/dripping to mix in with the cooked rice. The cilantro rice is already flavorful, but adding dripping elevates the flavor of the rice making it just as good as the chicken. Every bite is so savory. One day i was scouring through the web and found this recipe by Chef Ainsley Harriott from Food Lovers (reposted by Lynley) which is very similar to mine. He also used soya sauce in his recipe. It is not a secret now that home cooks and many western chefs have been using soya sauce in their cooking to enhance certain recipes and that’s what Ainsley Harriot and I have done here.
