Recently my friend Clarinda mentioned that her sister Melinda have been craving for this chicken salad recipe that i’ve made since 2011. I made that for a party and it was a big hit. Everyone raved about it. I’ve always loved a hearty salad for dinner, especially as a meal. It has so many elements in it to fill my belly and makes me feel healthy and not guilty eating it. Pun intended. Well, it depends on what you put in it really and what dressing you choose. Tired of your usual salad, your typical ingredients day in and day out? Want to have a balanced meal with leafy greens, proteins and carbohydrates all in one salad bowl? Lets make it bolder, bigger and better. Get your favorite vegetables or greens and put in just about anything you would like. I’ve had salads toss with pastas, beans, dried fruits, fresh fruits, nuts, cheese, olives, bacon (love them), caramelized nuts, eggs, charcuterie meat, seeds, sweetcorn, squash, avocado, potatoes, seafood, chicken, beef and anything you could think off out of the box. Salads don’t have to be boring. Your salad bowl is your oyster. But before choosing your salad ingredients, know your dressing first. You don’t want your salad not matching your dressing flavor profile. Or vice versa. But don’t ponder over it too much, most salad dressings goes well with just about anything. Just jazz it up with your favorite ingredients and dressing and away you toss.
I’ve made mine with chicken using our favorite marinade. That’s what Melinda misses. This chicken is delicious as a main, make chicken fajitas with it, tossed with salads or even make sandwiches with it. For vegetarians, use firm tofu with this marinade and pan fry till golden brown. When your protein is well prepared with flavor, your salad will be a winner. If you serve it with a great dressing, it will be a star on the dinner table. Hope you will enjoy this hearty salad.
