I made this salad for a party and it was a big hit. I’ve always loved a hearty salad for dinner, especially as a meal. Lets make it bolder, bigger and better. Get your favorite vegetables or greens and put in just about anything you would like. Main ingredients are so versatile, so choose to your liking.

  1. For the dressing, mix all the ingredients together with a whisk until creamy. Store in the fridge and let the flavors infuse.
  2. Mix chicken marinade ingredients together. Tenderize the chicken breast using a meat pounder. Season it with marinade. Store in the fridge to marinade for 30 mins or more. Pan fry the chicken or barbecue the fillets for best flavor. Cut into long strips.
  3. While chicken is marinating, roughly chop the pecans. In a sauce pan, melt 1 tbsp salted butter in a pan on low heat, add in the nuts and 1 tbsp brown sugar. Keep on stirring and cook until the sugar caramelizes. Set aside to cool, spread it out on a baking sheet to avoid nuts sticking together.
  4. Prepare the greens and toss together. Layer the top with all the other ingredients for presentation. Sprinkle with pecans. Set aside.
  5. To serve, toss the salad with dressing or serve it on the side, place a fair amount of salad on a dinner plate. Topped with sliced grilled chicken. Enjoy!
