These orange cookies are absolutely light and buttery that almost melts in your mouth. So tender, chocolaty, with just a touch of sweetness with a bright burst of citrusy orange zest just dancing on your tastes buds. I’ve adapted these cookies from my mom’s recipe that we’ve craved for so much growing up. Don’t get me wrong, her recipe is fabulous too. I’ve adjusted the recipe for a more tender texture and it turned out amazing just as good as my childhood if not better. Weirdly enough it brings back childhood memories. I love the buttery light texture and consistency of the cookie. These little orange gems of heaven makes you wonder is this a shortbread cookie or a butter cookie? Frost it with pretty icing, dip it in chocolate, spread it with your favorite jam and they are great for gift ideas. And this is what makes them so unique.
I’ve made these many times, that is because most of the ingredients you probably already have sitting in your pantry or fridge. Sometimes I bake the cookies ahead of time and freeze them unglazed in an airtight container. Whenever I have the cravings or invited guest I just had to warm it up in the oven at 280°F for 3-5 mins, let it cool completely and glaze it. They are really simple to make. When I’m in a hurry, I just throw everything into the blender and Voilà! Thanks to the cake flour that is low in gluten and the corn flour with zero gluten, which helps cut down the structures of gluten in the flour. This will result in a more tender cookie oppose to a tougher cookie. If you are someone who do not like things too sweet, this is the one for you as I do not like anything too sweet either. Health wise, better for us. Bingo! No I don’t play bingo and no I do not have Bingo wings……………… yet. Although, my husband always teases me with my nonexistent bingo wings. These buttery orange cookies are great for tea parties, Easter or even during Christmas. But as for me, I like them All Year Round.
