If you are looking for a healthy and guilt free cookies, this trio seeds cookie is one of my favorites. Why seeds, that is because seeds are packed full of nutrition. Pumpkin, sunflower and sesame seeds are listed in the top eight healthiest seeds. I wanted to have a snack that is guilt free, with fiber and flavorful and so i experimented with whole wheat healthy seeds cookies.
Pumpkin seeds has five forms of vitamin E, good source of minerals like manganese, phosphorus, copper, magnesium, protein, zinc, iron and with antioxidants and antimicrobial benefits. Sunflower seeds are anti inflammatory with cardiovascular benefits and a rich source of phytosterols for heart health. It is an excellent source of vitamin E, vitamin B1, B6 and B3, copper,selenium, manganese, magnesium, phosphorus and folate. Sesame seeds are highly anti inflammatory and full of antioxidants. They are an excellent source of Copper, manganese, phosphorus, calcium, magnesium, iron, molybdenum, zinc, iron, vitamin B1 and fiber. Sesame seeds has another level of nuttiness that changes the whole game of flavor. Just like Hummus, the distinct taste comes from sesame paste (Tahini) or it will not taste like hummus. My suggestion is, use half of your cookie dough and make the other half with added sesame seeds.
