What could go wrong with Peanut butter, ice cream, with crunchy peanut butter bits and peanut butter cookies in it. Nothing. Last minute guest, no dessert, no problem. Just whip up a batch in minutes. Easy peasy. This lava cake is not too sweet, that’s what i love about it. I used Ben & Jerry’s Peanut Buttah Cookie Core ice cream. You could use any ice cream you’d like. If you or your guest have a sweet tooth, i suggest you serve it with ice cream or melted chocolate. Sometimes I have mine with a dollop of Nutella on top. So good. Enjoy your melting moments.

  1. Preheat oven to 350 F. Lightly spray or grease two 5 oz ramekins. Size 3 1/2″ D x 2″ H.
  2. Scoop ice cream out into a bowl and let it sit at room temperature for 5-8 mins to soften. Depending on where you live, temperature may vary differently from summer to winter or even tropical countries that are hot all year round, so watch the consistency. You don’t want it to over melt.
  3. Stir ice cream until you reach a ribbon consistency when lifted. Add in egg, mix well. Fold in flour and mix until incorporated with no lumps.
  4. Divide the batter evenly between two ramekins and bake for 17-18 mins. The top should jiggle just a little when you remove from the oven. Let it cool for 5 mins. Run a knife along the inside of the ramekin for easy release. Put a plate on top of the ramekin and quickly flip it over. Tap it a few times to release if need to. Or just eat it right off of the ramekin with a dollop of ice cream on top.
Recipe Notes

Some oven temperatures may run high, if so, bake at 325°F.
