Seeds are packed full of nutrition. Pumpkin, sunflower and sesame seeds are listed in the top eight healthiest seeds. I wanted to have a snack that is guilt free, with fiber and flavorful and so i experimented with whole wheat healthy seeds cookies.

Instructions
  1. Stir all the dry ingredients together until well incorporated. In a separate bowl mix all the wet ingredients together.
  2. Mix the dry into the wet and mix well. Do not over mix.
  3. Roll the dough out flat between two sheets of wax/baking paper to about ¼ inch thick. Refrigerate 30 mins or freeze flat for 10-12 mins in the freezer.
  4. Preheat oven to 325°F. Cut into 2×2 inch squares or rectangular. Size will determined the number of cookies you will get. Bake 15-20 mins until golden brown.
  5. Let cool in the pan. You can eat it as is or you can dip in melted chocolate if you have your choczilla moment. Enjoy.
Recipe Notes

As this is not a very sweet cookie, feel free to add another 1/2 cup more of sugar.
